We are seeking an experienced Head Baker to lead our bakery's production team.
The Head Baker is a hands-on manager that produces high quality artisan bread and bread products from scratch and bread-related innovative breakfast & lunch offerings in a high-volume artisan bread production facility.
This position mentors, develops, and coaches team members by creating a collaborative work environment while ensuring food safety and process controls are being followed while meeting quality standards.
Essential Functions:
Creates all bread-related goods applicable to the bakery menu Hires, trains, and leads a crew of bakers with varying degrees of experience in the bakery to achieve our standards of excellence on a consistent basis Schedules, plans, coordinates the work activity to produce items according to the daily Production Schedule Supervises and motivates team members through leading by example with regard to attitude, work quality, safe practices, attendance, follow-through and organization.
Maintains accurate bread formulas by following recipes closely and explicitly, carefully weigh and measure all ingredients as specified, to the gram, to ensure that products meet company standards for taste, texture, appearance, quality and consistency Ensures compliance with our Good Manufacturing Practices while handling all products and equipment and maintain a clean and organized space during production Monitors/manages food and labor costs, purchase orders as well as inventory of food and supplies Keeps area clean and neat which includes doing dishes and tidying workspaces Oversees and maintains safety and sanitary standards in production areas according to the State's Health Code and internal standards Actively participates in menu planning and the introduction of new products that meet established standards of quality and innovation Other duties as assigned.
REQUIREMENTS:
Strict attention to detail, measuring ingredients and mixing them with precision to ensure consistency in the final product Ability to maintain quality control standards of the bread products A passion and love for food and service Familiarity with all professional kitchen equipment, including mixers, blenders and dough sheeters Understanding of food safety practices High level of personal integrity, professionalism and maturity Excellent time-management skills Ability to remain calm and focused in a fast-paced environment Ability to lead, train and develop a team, build and keep team morale, with a guest-focused attitude Ability to sit, stand, stoop, reach, and walk.
Must be able to work extended periods of time on your feet and lift up to 50 lbs.
Availability to arrive to work at or before 4am including on weekends and holidays Capacity to maintain a consistent pace throughout your shift to meet deadlines for product deliveries EDUCATION & WORK
Experience:
High school diploma or equivalent; culinary degree preferred Minimum of four years experience in a bakery / hotel or restaurant as a baker, Pastry Chef or similar role with at least two in a lead role The ability to work legally in the United States.
Competent computer knowledge - accustomed to working in an MS Office environment including use of Excel Bilingual English/Spanish preferred Job Type:
